Tocaya opening 15th unit in 3 years

California-based Tocaya Organica founded in 2016, which recently made the 2019 Fast Casual Top 100, is opening its 15th location June 3. The unit , 4303 W. Riverside Dr., Toluca Lake, will bring a wellness-driven dining experience and healthy food choices to Los Angeles' valley, according to a company press release.

Tocaya Director of Culinary AJ McCloud designed the menu, which is rooted in traditional Mexican recipes but accommodates a variety of dietary preferences ranging from vegan and gluten-free to vegetarian and Keto. Using high-quality produce as the foundation of its seasonally rotating menu, each dish starts vegan with chef’s recommendations for protein and dairy additions, according to the release.

Signature menu items include:

  • Guiltless Gluten-Free Burrito with Spanish cauliflower rice, black beans, tri-color peppers, jalapeno cabbage and vegan chipotle crema in a Siete gluten-free coconut and cassava flour tortilla.

  • Fajita Del Rey bowl with sauteed peppers and onions, cilantro lime rice, black beans, vegan chipotle crema, guacamole and pico de gallo.

  • Barrio Tacos with jalapeno jack, roasted tomato salsa, avocado, diced red onion and cilantro.

  • Mushroom & Jalapeno Quesalita with house-made corn tortillas, sauteed mushrooms, onions, cilantro, chopped jalapenos and a side of roasted tomato salsa.

  • Churro Waffle Bites with a choice of vegan Callebaut chocolate or strawberry dipping sauce.

  • Barrio Fruit Bowl tossed in lime and tajin.

  • Assorted Agua Frescas including watermelon, cucumber mint, and strawberry basil.

The Madera Group, which also operates Toca Madera, opened the first Tocaya in 2016.
